Have I ever told you about my kitchen? We live in an approximately 1,000 sq. foot apartment. It’s just enough space for our small family, but the one room I’m not totally in love with is our kitchen.  Continue reading “Soft Ginger Lemon Cookies”

Reese’s Stuffed Peanut Butter Chocolate Chip Cookies

Peanut Butter cookies studded with semi-sweet chocolate chips and baked with a special surprise hidden inside. Spoiler alert: the surprise is a mini Reese’s peanut butter cup.

Yikes! I haven’t done this for a while (almost a month to be exact), and I’ve missed this blog. Words can’t even express just how busy the past month was for me. I even spent the past few days, the first few days of November, in what I fondly referred to as the “post-October coma”. True story.

When I started this blog I vowed to myself that I’d never have a long leave of absence like that, but life just happened and when it came down to it family and my other adult responsibilities took precedence, and on the back burner this blog went. So since I’ve been MIA for what feels like forever, here are some highlights from the past month: Continue reading “Reese’s Stuffed Peanut Butter Chocolate Chip Cookies”

Whole Wheat Pumpkin Chocolate Chip Cookies {Egg Free}

I’ve been trying to develop some yummy pumpkin recipes for you over the past few weeks, and I’ve had this realization: I am not as much of a pumpkin fanatic as I used to be.

I mean pumpkin is good, but I am definitely way more of an apple/pear person during the fall than a pumpkin person. That being said, just you wait until you see the pumpkin chocolate poke cake I developed for Mandy’s Recipe Box (I start contributing to her site this month)! It’s absolutely divine. I love the combo of pumpkin and chocolate.

Life is so busy. I am still adjusting to David’s increased hours at school and at work; we hardly see each other these days. As I look around the house today I’m reminded of how nice it was to have him home a little more often during his first year of grad school.

There’s a long list of things that need to be done, which if he were here David would be glad to help with!

The kitchen floors need sweeping and mopping. The floor in the kids room is covered in toys. There are baskets of laundry that need to be folded. The bathrooms need cleaning.

I need to go to the grocery store, but oh shoot… that would mean having to take both kids (instead of just one or none at all). I would love to go to the gym, but no David at home means no one is here to watch the kids while I exercise.

Sheesh, David really spoiled me last year and I’m beginning to realize just how much he did for me when he was able to be home more frequently and how I took him for granted!

Small Batch Chocolate Chip Cookies

The perfect chocolate chip cookie recipe for when the craving strikes but you don’t want to make a massive batch!

Chocolate chip cookies are my all-time favorite cookie. They might even be my all-time favorite treat. Ever.

When I was working to lose weight, I’d often have cravings for chocolate chip cookies. But part of losing weight for me meant developing some self control, and I knew that having 2-3 dozen cookies lying around was not a great idea. Continue reading “Small Batch Chocolate Chip Cookies”

Salted Caramel Pretzel Cookie S’mores

Small-batch pretzel crunch chocolate chip cookies made in to s’mores! These cookie s’mores are more commonly referred to as s’mookies (s’more + cookie).
Salted Caramel Pretzel Cookie S'mores (S'mookies) // bakingyum.comThese s’mores are not your average summertime guilty pleasure. They are over-the-top decadent, and 100% worthy of being a part of your next s’more night.

Now, I’m a huge fan of s’mores but every once in a while I think we should all trade out the humble graham cracker for something a little more exciting. Like say, an oreo or a fudge-stripe cookie… or my favorite graham-cracker-swap-out ever:  homemade chocolate chip cookies. Continue reading “Salted Caramel Pretzel Cookie S’mores”

Small Batch Sugar Cookies

Soft bakery style sugar cookies topped with classic buttercream frosting and colored sprinkles. No dough refrigeration required, just make the dough and bake!

My husband’s name is David. David doesn’t care for sugar cookies. In fact, he sort of hates them. I, on the other hand, LOVE a frosted sugar cookie.

Actually there are a lot of foods I like that David doesn’t like. There are even some foods I don’t like, but admittedly I’m not that picky. I’m a firm believer that if you think you don’t like a certain food you should try it time and time again anyway, because at some point you might find a way of preparing it that you love.

This is probably why I haven’t given up on quinoa yet. I try it every few weeks, and I usually still don’t like it, BUT I did find these little brown rice and quinoa packets that I just love. See? If I had totally written off quinoa I may have never tried Seeds of Change. <—- BTW, that wasn’t a sponsored sentence. I’m just a girl in love with a brand of microwave-ready rice packets and I want the world to know.

aaaaaand I’m rambling about health food in a post about cookies.Small Batch Sugar Cookies. Recipe makes just 6 cookies! // bakingyum.comPoint being, I think you can learn to love any food. I’ve always been certain that I could get David to love a sugar cookie. Continue reading “Small Batch Sugar Cookies”
